A quarter beef sounds intimidating until you break it down. You're buying roughly a quarter of one animal — around 110 to 120 pounds of packed beef — cut to your specifications by our USDA butcher and flash-frozen.
What arrives: somewhere around 14–18 steaks, 6–8 roasts, short ribs and soup bones, a brisket portion, and 45–55 pounds of our gourmet ground beef. Exact numbers vary because animals vary — that's ranching.
Space: plan on about four cubic feet of freezer, which is a standard chest freezer with room to spare. Cost: the best per-pound price we offer, settled on packed weight, with your invoice emailed before anything is charged.
For a family that eats beef a few times a week, a quarter typically lasts four to six months — and changes how you cook. When the freezer is the grocery store, dinner starts with 'what do we feel like' instead of 'what's on sale.'
