The serious stock-up. When you reserve a quarter, we schedule your animal, our USDA butcher cuts it to your specifications — steak thickness, roast sizes, ground pack weights — and everything is flash-frozen and boxed. Final price is settled on packed weight, and we email your invoice before anything is charged. Pickup at the ranch or delivery within our area.

Like everything we sell, this comes from a Santa Gertrudis × Aberdeen Angus animal born and finished on our own pasture — genetics we've spent twenty years refining for a richer, more consistent eating experience than typical grass-fed beef.
How to thaw
Thaw in the refrigerator, still sealed, for 24–48 hours depending on thickness. In a hurry: submerge the sealed package in cold water for 30–60 minutes. Never thaw on the counter.
How we'd cook it
Keep it simple: salt generously, get the pan or grill properly hot, and let the beef rest as long as you cooked it. Grass-fed beef cooks about 30% faster than grain-fed — pull it one temperature earlier than you think.
Storage & shelf life
Keeps 12 months in the freezer in its vacuum seal. Once thawed, cook within 3–5 days. If your delivery arrives cool to the touch but soft, it's safe — refreeze or cook right away.
Shipped to you
Free shipping on orders over $245. We ship Mondays and Tuesdays only, so your box never sits in a depot over a weekend. Everything goes out frozen solid, vacuum-sealed, packed with dry ice in an insulated box, via FedEx (street addresses only — no PO boxes).

Within 50 miles of Groesbeck, TX we hand-deliver — request it at checkout. It's often next-day, and often one of us personally at your door.
When your card is charged
Many cuts are priced by exact weight, so your card is charged between Sunday and Tuesday once your order is weighed and packed. You can change your order any time before then.
Our promise
If anything arrives unsafe by USDA standards, we replace it. Beef that arrives cold to the touch is safe to refreeze or cook immediately.
